The world's easiest pasta


My dear Luis has been making this ridiculously simple pasta sauce for so long that it's a crime that I haven't shared it with all of you yet! It's a simple, no-cook sauce...all you need to do is toss a can of tomatoes, fresh basil and garlic, some really good olive oil and a bit of spice into your blender and whiz it altogether. Tossed onto hot pasta, the sauce cooks just a little bit...and the result is simply delicious! Try this for a weeknight meal or anytime when you're pressed for time as we will be this month, with lots of travel on the horizon (Seoul, Macau and Hanoi!). This recipe uses a pound of pasta, but we often cook just enough pasta for the two of us. The leftover sauce can be frozen or kept in the fridge for a few days. Feel free to top your pasta with freshly grated parmesan, some crumbled feta, capers, olives or red pepper flakes.


WORLD'S EASIEST PASTA
Serves 4-6

1 (400 grams or 14 ounces) can diced tomatoes or whole tomatoes in juice
1/4 cup chopped fresh Italian basil
1/4 cup good quality extra-virgin olive oil
2-3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon (or to taste) chili powder
1 teaspoon onion powder (optional)
Salt, to taste
500 grams (1 pound) linguine, spaghetti or other pasta of your choice

1. Whiz all of the sauce ingredients (tomatoes through salt) in a blender. Set aside.

2. Cook the pasta in salted water until just al dente. Drain and toss with the toss and serve right away. It's that easy!

  3. Hmm..that is so easy and looks delicious. Don't have any canned tomatoes, could one do this with fresh ones?

    1. Sure, fresh tomatoes would be great! 2 cups ripe chopped ones should do.

  7. I've been making this past for years also with the same ingredients but I never blend the tomatoes. Also I oftne use rotel instead and when the pasta is almost ready I drain and cook for the last minute after pouring the rotel in with the past ...guests love it. It is much lighter than a usual red sauce and with good cheese and "hot4you Italian hot sauce "it is great and simple.
